Pumpkin French Toast

1/2 cup of pumpkin puree (not pie filling)1 cup of non fat egg substitute1/2 tsp vanilla1 tsp cinnamon1/8 tsp nutmeg1/8 tsp allspice1/2 tsp ginger8 slices of whole white wheat bread
Whisk together pumpkin, vanilla, spices & egg substitute and place in a 13X9 baking dish.
Dip slices into mixture to well coat both sides of the bread. Let it sit a few minutes in the mixture.
Heat griddle or fry pan on medium high heat. Or an electric fry pan/griddle at 400 F. Spray pan with cooking spray.
Cook slices on each side for two to three minutes. Serve with maple syrup or your favorite topping.
Makes 8 servings.
