Whole Wheat Pancakes

Ingredients
1 cup whole wheat flour1 cup all-purpose white flour2 Tbsp corn meal1 1/4 tsp cinnamon1 Tbsp baking powder1 tsp baking soda3 egg whites (large)2 1/4 cups low-fat milk3 Tbsp honey1 tsp vanilla1/4 cup oil
Directions
Add all dry ingredients (flour through baking soda) in a large bowl. Whisk to combine.

Add all wet ingredients (egg whites through oil) into a medium bowl and whisk to combine (about 2 minutes).

Add wet ingredients to dry ingredients, and whisk just until incorporated, do not overmix.

Heat a griddle pan over medium-low heat. Spray with cooking spray. Using a 1/3 cup scoop, Pour batter onto pre-heated griddle. Cook until bubbles form, pop, and stay open, flip (about 1-2 minutes). Cook on second side for an additional minute.

Keep pancakes warm in preheated 200˚F oven if needed.

Serve warm.
