Baked Macaroni and Beef Casserole

Ingredients
3 ounces dry Smart taste elbow macaroni8 ounces 96% lean ground beef1/2 cup onion1/2 cup red bell pepper1 can mushrooms1 cup petite diced tomatoes1/4 cup parsley1/4 tsp basil, thyme, ground pepper1 1/2 ounce mozzarella cheese
Directions
Preheat oven to 350 degrees
In large pot of boiling water, cook macaroni 8-10 minutes, until tender. Drain, discarding liquid.
In large skillet, cook beef, onion and bell pepper, stirring frequently until vegetables are softened. Add tomatoes, parsley, basil, thyme, black pepper. Stirring frequently until heated through. Add cooked macaroni to beef mixture; stir to combine. Transfer to 1 quart baking dish. Sprinkle evenly with cheese. Bake 20 minutes, until bubbling and slightly brown on top.
