Lowfat mac and cheese with Pumpkin

Ingredients
Cottage CheeseCanned PumpkinWhole wheat elbow macaronishredded sharp cheddarbread crumbs
Directions
Preheat oven to 350. boil/cook pasta and drain.
Puree pumpkin and cottage cheese. Pour mixture into a baking dish. Add pasta and shredded cheese and coat all ingredients.
Sprinkle with bread crumbs and bake for 15 mins.

    was a very good lowfat version. I added nutmeg, and lowfat ricotta cheese.I also added parmesan cheese mixed with the bread crumbs and sprinkled it on th top. Also added lowfat evaporated milk. - 9/30/12
