1 Eggplant, chopped1 Tomato, chopped1 Bell Pepper, chopped1 Medium red Onion, sliced3 garlic cloves1/8 tsp Salt1/4 C Extra Virgin Olive OilPesto Sauce, 1/4 COrowheat Sandwhich thinsVegan Parmesan Cheese1/4 C Hummus
Chop veggies, mix with olive oil, salt, pepper, some oregano, add some pepper flakes for a little heat if you'd like. Spread on cookie sheet,Roast in oven @ 400 fpr 30-45 mins, untill all tender.
Toast OroWheat bun, spread a tablespoon of hummus on them, add roasted veggies on top, add pesto to top. Sprinkle soem Vegan Parm cheese over them. Eat.
