Ingredients
15oz can black beans, rinsed and drained12oz frozen corn12oz jar salsa (under 130 cal for entire jar)10oz package fresh spinach1# frozen tilapia filets (4 4oz filets)
Directions
In large skillet, mix frozen corn, beans, and salsa. Layer fresh spinach on top. Place tilapia filets in single layer on top of spinach. Cover w/ tightly fitting lid, cook on med-high heat approx 10 minutes, or until fish flakes easily with a fork (steam will cook the fish).
