Spicy Chicken soup

2 lbs. chicken breast cubed2 tsp canola oil1/2 cup water2 low sodium taco seasoning packets32 oz of Spicy V816 oz chunky salsa1 can of black or pinto beans10 oz of frozen corn
Cook the chicken in the oil till white, add water and taco seasoning packets. Simmer until chicken is coated in seasoning. Put in a slow cooker and add the rest of the ingredients. Cook on low for 3-4 hours. You can use regular V8 and mild salsa if you want a tamer flavor, or use the spicy V8 and hotter salsa for more heat. Sometimes we add jalapenos as well.
