* Egg white, 12 serving * *Whole Wheat Tortilla, 4 serving * *Peppers, sweet, red, fresh, .50 cup, chopped * Green Peppers (bell peppers), 0.5 cup, chopped * Red Ripe Tomatoes, 3 cup, chopped or sliced * Onions, raw, 1 cup, chopped * Spinach, fresh, 1 package (10 oz) * *Potato, raw, 2 large (3" to 4-1/4" dia.) * Olive Oil, 2 tbsp * *Ground Cayanne Pepper, 0.25 tsp * Monterey Cheese, 1 cup, shredded
saute the red and green peppers, spinach, onion in some of the olive oil
saute the tomatoes in the rest of the olive oil add the half of the cayanne pepper and a pinch of salt
cooked diced potatoes
once all the vegetables are cooked
add the egg whites and scramble with the saute vegetables and cooked potatoes
add the some of the cheese in the scramble eggs
make the burritos with the wheat tortilla and scrambled eggs
pour some of the saute tomatoes over the burrito and some sprinkle some monterey cheese.
serve for breakfast of brunch
