Parmesan-Stuffed Chicken Thigh

Ingredients
4 Chicken Thigh (can sub. for breast)1c. fresh flat leaf parsley1/4c. plain dried bread crumbs1/4c. grated Parmesan cheeseGrated zest of 1 lemon (1tsbp)Course salt and fresh ground pepper
Directions
Preheat oven to 450 degrees F.
In a small bowl mix parsley, bread crumbs, Parmesan, and lemon zest. Season the mixture with 1/4 teaspoon each of salt and pepper.
Divide mixture into 4. Carefully loosen the chicken skin with fingers; tuck the mixture under the skin of each thigh.
Season chicken with salt and pepper.
Place in a 9X13 inch roasting pan.
Bake until the skin is crispy, the chicken is cooked throughly, and an instant thermometer inserted reads 165 degrees F.

    I think this was delicious. I may have put too much parsley in, and it was not flat parsley just regular parsley, but I like that flavor. This was very easy to make. I most definately will make this again! - 1/3/12
