* Ground beef, lean, 16 oz (remove) * Onions, raw, 1 cup, chopped (remove) * Carrots, raw, 2 cup, chopped (remove) * Celery, raw, 1.5 cup, diced (remove) * Basil, .67 tbsp (remove) * Parsley, dried, 2 tsp (remove) * Butter, salted, 4 tbsp (remove) * Chicken Broth, 8 cup (8 fl oz) (remove) * *Potato, raw, 8 cup diced (remove) * *Wheat flour, white, all-purpose, enriched, calcium-fortified, .67 cup (remove) * *cheddar cheese, grated, 4 cup (remove) * Milk, 1%, 3 cup (remove) * Salt, .5 tbsp (remove) * Pepper, black, .5 tsp (remove) * Sour Cream, reduced fat, .5 cup (remove)
Brown beef, set aside. Saute onion, carrot, celery, basil and parsley in 1T. butter until tender. Add broth, potatoes, beef. Simmer until potatoes are tender. In separate pot melt remaining butter. Add flour. Add mixture to soup. Add cheese, milk, salt and pepper. Cook over low heat until cheese is melted. Remove from heat and blend in sour cream.
