Cauliflower Mashed Potatoes

Ingredients
Frozen Cauliflower- 2 bags (11.5 oz each)2 TBSP I Can't Believe It's Not Butter Spray1/4C Fat-Free Half-n-HalfSalt & Pepper to taste
Directions
Boil both bags of frozen cauliflower until very soft. Remove from heat and drain all excess water.
Place cauliflower back in pot, add all other ingredients and mix on high until it reaches your desired consistency.

Makes approximately 5 servings (1 Cup Each)

    I made version of this tonight and loved it! I steamed fresh cauliflower and used a hand mixer, I added light parmesan cheese, 1 tbsp. FF sour cream, and sprayed in some "I can't believe it's not butter", garlic powder and it was so good. - 1/26/08
