Sausage, Eggplant, Mushroom and Feta with Whole Grain Penne

Ingredients
4 1/2 cups of peeled and diced eggplant1 pkg Jimmy Dean Turkey Crumbles4 cloves garlic, minced1 can tomato sauce1 tsp dried oregano1/2 tsp fresh ground black pepper1 can petite diced tomatoes1 pkg Healthy Harvest Ronzoni Whole Grain Penne, cooked1/2 cup crumbled feta cheese (about 2 oz.)
Directions
Makes 6 large servings

Spray large skillet with cooking spray. Cook eggplant, garlic and sausage over medium heat about 5 minutes, until eggplant is tender. Add all remaining ingredients except pasta and feta cheese. Cook over medium-low heat until heated through. Toss with pasta and feta cheese.

Garnish with parsley if desired.
