Crockpot Chicken Stew without starch or gluten

3 boneless, skinless chicken breasts, without antibiotics or gh1 14.5 can diced tomatoes packed in tomato juice3/4 c chopped fresh pineapple8-10 fresh basil leaves5-6 whole cloves of fresh garlicwater to coverblack pepper to tastecayenne or hot pepper to taste
Have small 1.5 qt crockpot ready.
Cut chicken breasts into bitesize pieces. Put in crockpot. Add canned tomatoes, chopped fresh pineapple, chopped fresh basil leaves, and chopped fresh garlic cloves. Add water or stock to fill crockpot. Add a shake or two of black pepper, and 1 tablespoon of sherry. Turn crockpot on to low and leave to cook for about 8 hours. When ready to serve, give it a stir or two. Add cayenne or hot sauce to taste. Serve. Makes 6 half-cup servings.
