Brown Rice, Lentils and Barley Pilaf (adapted from Weight Watchers)

Ingredients
4 carrots, diced4 cups low-sodium vegetable broth1 1/3 cups brown rice2 onions, chopped1/2 cups lentils, rinsed and drained1/2 cup pearl barley2 cups broccoli florets1/2 cup minced parsely (if desired)
Directions
In a large nonstick sauce pan or dutch oven, combine the carrots, onions,rice, lentils, barley and broth.

Bring to a boil, the reduce heat and simmer, covered, until the grains are softened, 30-40 minutes.

Add the broccoli and parsley and simmer, covered, untilo the grains are tender and the broccoli is tender-crisp, about 10 minutes.
