Ingredients:Yellow Sweet Corn, Canned, 2 can (12 oz) Green Beans (snap), 3 cup, choppedMushrooms, fresh, 2 cup, pieces or slices *Potato, raw, 2 large (3" to 4-1/4" dia.), dicedBeans, red kidney, 2 cup Meatless Sausage, 2 link, choppedSpinach, fresh, 1 package (10 oz) Broccoli, fresh, 3 cup, chopped or diced *Knorr Vegetable Recipe Mix (soup broth), 5 tbsp *Extra Light Olive Oil, 2 tbsp Carrots, raw, 2 cup, chopped Celery, raw, 1 cup, diced Oregano, fresh, 1/4 cup, finely chopped
Par cook onions, garlic and potatoes with the olive oil. In a 8qt. pot mix Knorr vegetable broth tablets with 5 cups of water. Bring broth to a boil. Add potato and onion mixture to broth. Add remaining vegetables to broth. Bring soup to a boil. Add oregano. Leave on medium heat for about an hour, or until carrots and potatoes are done. Season w/ salt and pepper to taste.
