Dungeness Crab Cakes

Ingredients
Lump crab meat, 1 lb. (I prefer Dungeness, but anything will do)Milk, 1 cupTabasco, 5 drops (I use Red Devil sauce)Parsley flakes, 1/2 teaspoonSalt and Pepper to tasteCrushed Ritz crackers, 30 countWhole wheat flour, 1 tablespoonYellow mustard, 1 teaspoonBread, 2 slicesCrushed red pepper, 1/4 teaspoonCanola Oil
Directions
In saucepan, mix together flour and milk. Cook over medium heat until thickened; let cool. Add Tabasco sauce and mustard. Pick over crab meat; add bread crumbs, parsley, salt, pepper, and crushed red pepper. Add cooled sauce; mix thoroughly. Shape into cakes. Roll in cracker crumbs and fry until brown.

This is excellent when paired with a New Orleans rémoulade!
