Blueberries, fresh, 1 cup Whole Wheat Flour, 1 cup Baking Powder, 2.5 tsp Splenda Sugar Blend for Baking, 16 tsp Egg, fresh, 1 jumbo, slightly beaten Applesauce, unsweetened, 0.25 cup Milk, nonfat, 0.75 cup Brown Sugar, 1 tsp packed
1. Preheat oven to 400 degrees.
2. Lightly spray a 12 muffin tin.
3. Wash & drain blueberries.
4. Sift flour, baking powder & Splenda blend in lg. bowl.
5. Combine eggs, applesauce & milk in sm. bowl, then pour all at once into dry mixture & stir just enough to blend.
6. Gently fold in blueberries.
7. Divide batter into 12 muffins tin & sprinkle with brown sugar.
8. Bake 15 min. or until brown.
9. Allow to cool at least 2 min. before removing from tin.
