Whole Wheat flour 2 cupsApple juice concentrate unsweetened 1 cupcinnamon, ground 1 TBSPBaking powder 2 tspBaking soda 1/2 tspSalt 1 tspCarrots, raw, grated 2 cupsapples, fresh, 1 cupEgg, 1 wholeEgg, 2 whitesApple butter 1/2 cupVegetable or Canola oil 1/4 cupVanilla Extract 1 TBSPWalnuts 1 ounce, choppedWheat Germ 2 TBSP
1. Heat oven to 350 degrees. Fill muffin pans with 18 muffin cups or use silicone muffin pans.
2. Whip together eggs, whites, apple butter, oil and vanilla.
3. Stir together dry ingredients.
4. Add Carrots and apples.
5. Mix dry and moist mixtures together until moist.
6. Place in muffin cups.
7 .Bake for 15 to 20 minutes
8. Cool and server.
