Cheryl's Veggie Quiche

Ingredients
1 tsp olive oil1/4 c onion1/4 c green bell peppers1 large tomato seeded 5 oz package fresh spinach1 c egg whites3/4 c egg beaters1 tsp garlic powder 2 eggs1/4 c Bisquick1 c light mozzarella cheese shreddedsalt and pepper to taste
Directions
add olive oil to pan, sauté green peppers and onions, garlic powder until tender, add seeded and diced tomato, and spinach, cook together until spinach has wilted, spray a casserole dish with cooking spray, layer vegetable mixture in the bottom, mix all eggs together and add Bisquick and cheese, pour over vegetable mixture. Bake at 350 degrees or until middle is done.
