Zucchini Oat Bran Muffins

Ingredients
1 c. oat bran1 c. scalded milk1 c. grated zucchini1/2 c. brown sugar2 eggs1/4 cup canola oil1 tsp. vanilla extract1/2 c. chopped walnuts1 1/2 c. all purpose flour2 tsp. baking powder1 tsp. salt2 tsp. ground cinnamon1 tsp. ground ginger1/2 tsp. ground nutmeg1/4 tsp. ground cloves
Directions
Preheat oven to 375 degrees.

In a small mixing bowl, mix the oat bran and hot milk. Set aside to cool. In a medium mixing bowl, mix the dry ingredients and set aside. After the oat bran has cooled, mix in the rest of the wet ingredients. Then pour the wet ingredients into the dry ingredients and mix until just combined. Spoon the batter into muffin tins that have been sprayed with cooking spray or lined with paper cups and bake at 375 degrees for 20 minutes or until lightly browned.
