Sweet Potato Casserole

3 large sweet potatoes1 tsp salt1 stick butter, softened1 cup sugar1-1/2 tsp vanilla1-1/2 tsp cinnamon1-1/2 tsp ginger2 eggs, beatenTopping:1-1/2 c chopped pecans1-1/4 c light brown sugar2/3 c flour3/4 c butter, softened
Wash sweet potatoes, boil in water with salt until soft, or cook in instant pot 10 minutes, sliced lengthwise, cut side down on trivet with 1 cup salted water. When cool, peel and mash with electric mixer.
In large bowl, mix mashed sweet potatoes with sugar, butter, vanilla, cinnamon, ginger, and eggs. Mix well and pour into buttered 9x13 casserole dish.
Mix the topping ingredients and crumble over top of casserole.
Bake 1 hour at 350 degrees or until topping is browned.
Makes 16 servings.
