Ingredients
2 large potatos2 medium tomatos1 cup mushroom stems or pieces8 baby carrots1/2 large onion sliced/diced2 cups bell pepper strips2 cups sweet red pepper strips2 cups yellow bell pepper strips1 tbsp olive oil1/4 cup water1tsp salt1tsp garlic powder1tsp black pepper
Directions
Preheat oven to 350 degrees. Chop vegetables and combine in a 9/9 inch baking pan. Pour olive oil and water over the mixture, sprinkle on seasonings. Cover and bake for 60 min. or until vegetables are tender.
Makes 6-7, 1 cup servings.
