Gingerbread Belgian Waffles

Ingredients

½ cups Butter½ cups Brown Sugar½ cups Molasses2 whole Eggs1-¼ cup Milk (I used Soy)2 cups Flour (I used whole wheat)½ teaspoons Baking Powder1-½ teaspoon Cinnamon1 teaspoon Ground Ginger
Makes 12 servings - 1 waffle each (My waffle maker makes 2 waffles at a time)
Melt butter and mix with brown sugar and molasses. Add eggs and milk. Combine until incorporated.
Add all dry ingredients and whisk until smooth.
Pour onto hot greased waffle iron and cook until nicely browned but not burned. You want these soft and fluffy!
These freeze beautifully. Just pop in the toaster for a few minutes to warm up and serve.
