Broccolli cheese soup

Ingredients
1/4 medium yellow onion, chopped3 tbsp butter3 tbsp flour3 c half and half3 c chicken stock4 c frozen broccolli1/2 c shredded carrots3-4 c shredded chedder cheese
Directions
Place chopped onion and butter in a large soup kettle and sautee until onion is cooked through.
Add flour and cook, stiring constantly, until raw flour taste is cooked out and it is lightly brown.
Add half and half and the chicken stock to the pan and bring to a boil. Reduce heat and simmer for about 15-20 minutes.
Add the broccolli and carrots and simmer for another 15-20 minutes or until the vegetables are cooked through.
Add the chedder cheese, stiring frequently to make sure it melts through evenly.
Add salt and pepper to taste.

Makes about 10 servings.
