Potato Soup with Gruyere Cheese

Ingredients
* *Potato, raw, 1 large (3" to 4-1/4" dia.) * Milk, nonfat, 1 cup * Onions, raw, 1 cup, sliced *Garlic, 2 cloves chopped * Olive Oil, 1 1tsp * *Flour, white, 1 tsp * Gruyere Cheese, 0.25 cup, shredded * Sun Dried Tomatoes, 6 pieces chopped * Dried Parsley, 2 tsp
Directions
Peel potato and cut into cubes.
Heat 2 cups of water and boil potatoes with some salt.

In the meantime, saute sliced onions with olive oil until soft.
Add chopped garlic or garlic powder, sundried tomatoes pieces and milk.
Stir in flour and mix well.
Pour the mixture into boiled potatoes and remove from heat

Blend the mixture with a hand blender.
Add shredded cheese and parsley
Simmer on low for 2 minutes until cheese melts.
