Krystal's Vegan Pumpkin Cupcakes

Ingredients
2 egg substitutes1 1/8 cup sugar1/3 cup brown sugar1/2 cup Smart Balance Butter1 tsp vanilla extract2 cups grated fresh pumpkin (or canned)1/2 cup crushed pineapple1 1/2 cup flour1 1/4 tsp baking soda1/2 tsp salt1 1/2 tsp cinnamon1/2 tsp nutmeg1/2 tsp pumpkin pie spice1/4 tsp ground ginger
Directions
Beat together egg substitute, white sugar, brown sugar, butter and vanilla. Fold in flour, baking soda, salt and spices.

Bake 25 minutes at 350 degrees.

Makes 12 cupcakes.

Add cream cheese or buttercream (see my recipe) frosting.
