Lemon Blueberry Muffins

Ingredients
1 egg1 cup milk1/2 cup olive oil1/2 cup brown sugar, loosely packed2 cups whole wheat flour1/2 tsp. salt1 tbsp lemon rind1 cup blueberries, frozen or fresh3 tsp baking powder1/2 tsp. cinnamon1/4 cup granulated sugar
Directions
Beat egg and sugar; add oil and milk. Sift tog. flour, salt, baking powder. Slowly blend into first mixture. Add lemon rind and blueberries. Scoop into greased muffin pan (12 serving) to 2/3 full and bake at 375 deg. for about 20 minutes. Cool slightly, then brush tops with small amount of olive oil and dip in granulated sugar and cinnamon mixture. Makes 12 muffins.

    These are delicious!...I used about a tsp of orange peel and a tsp. of lemon juice because I didn't have any lemon peel, but they turned out wonderfully! Thanks for such a great recipe! - 4/26/10
