Heather's Healthy Fast Turkey Chili

1 lb of ground turkey (99% fat free)3 cloves of minced garlic5 T chili powder1 T cayenne1 T Cumin1 can of black beans1 can of kidney beans1 can of rotel (hot)1 can of chicken broth (low fat)1 can of corn2 chopped green peppers1 cup of waterOptional:Plain greek yogurt (fat free)shredded cheese (2% or fat free)
In a large pot put chopped garlic and green pepper. cook until soft. Add all of the ground turkey. Once turkey is browned add seasonings (chili powder, cumin, etc.) I like it spicy so I add a lot of Mexican style cayenne.
Next add all of the canned items- corn, beans, rotel (first time that I ever had rotel was in this dish) tomato paste, chicken broth, etc. Be sure to drain the cans of excess liquid.
Stir and add one cup of water and then let cook for 30-45 minutes. Add more spices according to taste.
I usually put a tsp. of plain fat free Greek yogurt and 2% cheddar cheese on top.
That's it! Simple and delicious. Low calorie and high in protein.
Makes 8 servings or more.
