Cauliflower Mashed Potatoes

Ingredients
3 LARGE Russet or BAKING Potatoes (skin on)4 cups of Cauliflower1/4 - 1/2 c. Fat Free (SKIM) Milk3 Tbls of Earth Balance Buttery SpreadSalt and Pepper to taste
Directions
Boil the cauliflower and potatoes separately until both are cooked tender and easy to cut with fork. Drain the water from both and contents of potatoes and cauliflower to the same bowl. Add earth balance and 1/2 the milk. Using a hand mixer, whip the contents until all vegetables are smooth and fluffy. You may have to add more milk. Add a dash of salt and pepper and serve hot!
