Zuccini Blueberry Bread

3 eggs 1/2 cup vegetable oil1/2 cup applesauce3 tsp vanilla extract1 cup splenda1 cup brown sugar2 cups shredded zucchini1.5 cup flour1.5 cup whole wheat flour1 tsp salt1tsp baking powder1/4 tsp baking soda1 tablespoon cinnamon1 pint fresh blueberries
Preheat oven to 350. Lightly grease 2 loaf pans with cooking spray.
In large bow, beat together eggs, oil, applesauce, vanilla, and sugars. Drain zucchini and add to egg mixture. Beat in flours, salt, baking powder, baking soda and cinnamon. Gently fold in blueberries. Divide equally between prepared pans.
Bake 50 minute or until toothpick inserted in the center comes out clean. Cool 20 minutes in pan then turn out onto wire rack and cool completely.
Makes 32 1/2 inch slices
