Delicious Spinach with Chickpeas

half a large onion, choppedone large shallot, mincedolive oilbacon, one slice, thick cut3 tbsp vermouth1 tsp caraway seedsone can garbanzo beans/chickpeas, drainedone bag frozen, chopped spinachsalt and pepper to taste
makes 3 healthy servings.
this could also serve as a main dish, though it is neither vegetarian nor does it contain enough meat to be considered "pork".
terrific served with roasted winter squash and a scraping of parmesan cheese.

sautee onion and shallot in olive oil on medium-high heat.
chop bacon and add to onions as they're becoming translucent.
as pan begins to dry, reduce heat and deglaze with vermouth.
add caraway seeds, and allow onion mixture to sweat until soft and translucent.
add garbanzo beans and allow to heat through.
add spinach and cook until hot.
add salt and pepper to taste.
serve and delight!
