Bulgur, dry, 1 1/4 cupWater, 1 1/4 cupGreen Beans, 2 cups cooked, chopped into 1 inch piecesReduced Fat Feta Cheese, 3 oz or 3/4 cupParsely, 1/4 cup choppedFresh Mint, 1/4 cup choppedRed Onion, 1/4 thinly slicedLemon Rind, 1/2 tsp grated Lemon juice, 1/4 cupOlive Oil, 2 1/2 tbsp.Salt, 1/2 tspPepper, 1/4 tsp Kalamata Olives, 4 olives finely chopped
Recipe makes 6 servings (serving size 1 cup)
Combine bulgur and boiling water in large bowl. Let stand 30 minutes or until water is absorbed. Add remaining ingredients to bulgur; toss gently. Serve at room temperature.
