Crock-pot Orange-Dijon Pork Chops

6 boneless pork chops cut 1 inch thick (sirloin)Salt and pepper2 tsp. Fresh thyme or 1/2 tsp. dried thyme3/4 cup orange marmalade1/3 cup Dijon mustard
Sprinkle both sides of chops with salt and pepper. Sprinkle chops with thyme. Place chops in a 3 1/2 to 4 quart slow cooker. In a separate bowl, combine the marmalade and mustad. Remove 2 Tablespoons of the mixture; cover and refrigerate. Add the rest of the marmalade and mustard along with 1/4 cup water to the crockpot, covering the chops.
Cover and cook on low heat for 6-7 hours, or on high heat for 3-3 1/2 hours. Transfer to a platter. Discard cooking liquid. Spread the reserved marmalade/mustard mixture over chops and serve.
