Ingredients
2 zucchini1/2 green pepper1/2 red pepper1 cup chopped red onion15 medium baby carrots1 8ounce bag baby bella mushrooms2 tablespoons olive oilKosher saltPepper
Directions
Cut up all veggies
place in baking pan
drizzle with olive oil
salt and pepper as desired
mix thoroughly
Bake uncovered in 400 degree oven for 35-40 minutes
Eat and enjoy
