Crock pot Coq au Vin

Ingredients
5 chicken thighs2 c. sliced fresh mushrooms1 large onion, cut in rings2 tbls. olive oil1/2 tsp. salt1/2 tsp. pepper1/2 tsp. dried oregano1/2 tsp. dried basil1/2 tsp. dried thyme
Directions
Heat oil in heavy frying pan over med-high heat. Sprinkle chicken with salt and pepper. Brown chicken in oil on all sides. Place chicken in preheated crock pot. Saute' onions and mushrooms in same pan for about 5 minutes or until tender. Add wine and stir any drippings from bottom of pan. Bring just to boil and then pour over chicken. Spinkle with remaining seasonings and cook for 3- 4 hours on high or 6-8 hours on low. Serve over cooked rice. (rice is not included in nutritional info.)
