CURRIED GARBANZO FILLING

2 tbsp. olive oil5 cloves garlic, crushed1 onion, peeled and finely diced1 carrot, peeled and finely diced1 green pepper, finely diced2 medium hot banana chilies, minced2 tbsp. cumin, ground1 tbsp. oregano1 tbsp. sea salt1 tbsp. turmeric4 cups cooked or canned chick peas1/2 cup tomato paste
1. Heat the olive oil in a large saucepan. Add the garlic, spices and vegetables. Cook the mixture over medium to low heat until soft.
2. Mash the chick peas in a food processor or by hand, and add to saucepan along with tomato paste.
3. Stir until heated through
I've made these but haven't yet measured out the servings. I'm guessing at about 12 1/2 cup servings.
** A whole can of tomato paste is just over 1/2 cup. I like it better when I just use 1/2 cup.
** Definitely use sea salt. Using regular table salt will make it too salty.
