Vegetarian Meat Loaf

Meat Loaf:8 slices of italian bread (1" thick)1 (14-oz) package soy crumbles, thawed1/2 cup chopped parsley2 large cloves garlic, finely chopped1 small sweet onion finely chopped1/4 egg substitute1 Tbl Olive oilVeggies6 medium baking potatoes, cut into wedges2 large sweet potatoes, cut into wedges2 large carrots, cut into 1/2" sliceds2 medium sweet onions, cut into ribs3 lg cloves of garlice, chopped1 Tbl olive oilsalt and pepper 1 cup marinara sauce
preheat oven to 375
spray roasting pan with nonstick spray
For meatloaf: Place bread in a bowl and cover with hot tap water. Let it soften for 5 minutes. Turn into a colander and press out as much water as possible. Put bread into large bowl and add the rest of the ingredients for the meatloaf. Mix well with your hands and season to taste.
Place meat mixture into the center of the prepared pan. Form it into a loaf and top with marinara sauce.
For veggies: Place veggies in a large bowl coat with olive oil and garlic. Toss to combine. Arrange veggies around meat loaf in pan.
Cover tightly with foil. Bake for 40 minutes. Remove foil and bake for another 35 minutes until potatoes are fork tender.
