Low Cal Pizzelles

Ingredients
6 eggs3.5 cups flour1.5 cups splenda1 cup Lt Margarine4 tsp baking powder2 Tbls vanilla
Directions
Beat eggs, add splenda gradually. Beat until smooth. Add the cooled light margarine and vanilla. Sift flour and baking powder and add to egg mixture. Dough will be sticky enough to be dropped by spoon.
Heat pizzelle maker. While still hot dust each pizzelle with podered sugar.

    Made these tonight, substituted egg beaters and used just two eggs, but mine did not get crispy like original ones. Did yours? Just wondering if they need the fat from the yolks? to make crispy. But still tasty, I use almond flavoring instead of vanilla just because I love the almond taste. - 10/24/10
