Eggplant with Orzo

2 cup cubed eggplant1 can preferably fire roasted tomatoes, drained1 onion, diced1T oregano, or to taste1 cup orzo pasta, made to box specs2T olive oil
make orzo according to package instructions
in saute pan, add olive oil and saute eggplant and onions until browned evenly, add tomatoes with or without juices, up to you.
season with oregano and pepper is desired. Cover and cook until eggplant is done.
Add orzo to pan and stir, coating orzo in all juices. Serve immediately.
