Potato Leek Soup

Ingredients
* Leeks, 2 leeks, white and light green parts only, chopped * Garlic, 4 cloves, chopped * Vegetable Broth, 4 cups * Carrots, raw, 1 medium, diced * Red Potato, 1021 grams, diced * Salt to taste * Water as needed * Hot and Spicy Spike Seasoning, 1 tspn * Smoked paprika, 1/2 tspn * Freshly ground black or white pepper (garnish)
Directions
Combine broth, vegetables and seasonings (except for pepper). Simmer for 30 mins or till vegetables are soft. Taste and adjust seasoning as necessary. Cool.

Blend till smooth. Top with freshly ground black or white pepper.
