Pumpkin Bread with Chocolate Chips

1 ½ cup White Flour1 ½ cup Whole Wheat Flour2 tsp. Preheat oven to 350 degrees.
1 ½ cup White Flour
1 ½ cup Whole Wheat Flour
2 tsp. Baking Powder
1 tsp. nutmeg
1 tsp pumpkin pie spice
½ tsp. cloves
2 tsp. cinnamon
Mix the dry ingredients in a large bowl and set aside.
3 large eggs
1 egg white
1 cup packed Light Brown Sugar
1 ¼ cup Granulated Sugar
Approx. ¾ can of pumpkin (29 oz large can)
1 tsp. Vanilla
2 tbsp. heavy whipping cream
½ cup unsweetened Apple Ssauce
Mix the sugars with the wet ingredients. Mix well. Slowly incorporate wet ingredients into flour mix. If necessary add ¼ - ½ cup water for consistency. The dough should be a little sticky and slightly thick - not too dry and not too runny. Stir in chocolate chips. I use semi sweet chocolate chips, about ¾ bag or 1 ½ cups. Mini chocolate chips work really well.
This makes 3 loaves or 1 loaf+one 8x8 square pan.
I use Pam baking spray in the pans and bake it at 350 degrees for 45-55 minutes.
Insert a knife or toothpick to check for doneness. Makes 36 servings (each loaf cut into 12 pieces).
