Turkey Black Bean Veggie Chili

2 garlic cloves, minced1 small onion, chopped1 yellow pepper, chopped2 Tablespoons olive oil1.5 lb ground turkey1 medium zucchini, shredded1 -14.5 oz. can diced tomatoes12 oz. tomato paste1 - 14 oz. can beef broth1 teaspoon salt1 bay leaf1/2 teaspoon oregano1/2 teaspoon black pepper1/4 teaspoon crushed cumin2 Tablespoons chili powder (or to taste)1 15-oz can black beans, drained
Saute the onion, yellow pepper and the garlic in olive oil in a large frying pan. When the onions and peppers are soft, add the ground turkey and brown, break into small pieces while cooking. Sprinkling chili powder or "season all" on the turkey while it is cooking will give it a little more flavor. While the turkey is cooking, mix the rest of the ingredients (except for the zucchini) in a large saucepan and start to simmer over low heat. Drain the fat from the turkey and add turkey meat to the saucepan. In the same frying pan, sautee the shredded zucchini, until it becomes soft and loses most of it's moisture. Drain the liquid from the zucchini and add zucchini to the saucepan. This recipe is fairly mild - add hot sauce or liquid smoke, to taste, if you like a spicer chili. Now simmer all of the ingredients for 30 minutes or so. Remove the bay leaf before serving.
