Smoky Pumpkin Seeds

1 cup pumpkin seeds, washed and dried1 tsp smoked paprika1/4 tsp cumin1/4 tsp salt1/8 tsp cayenne pepper1 tsp vegetable oil
Preheat oven to 350 degrees.
In a small bowl, combine paprika, cayenne, cumin, and salt.
Coat pumpkin seeds with oil, then toss with spice mixture. Spread pumpkin seeds in a shallow baking dish, and roast 10 minutes, stirring once to prevent burning.
Place in an airtight container for up to 1 week.
Makes 8 servings.
