Curried Egg Salad with Soy Mayo

4 large hard boiled eggs3/4 cup diced cucumber (with peel)3/4 cup diced celery4 Tablespoons Soy Mayonnaise1 tsp Paprika1 tsp Dried Minced Onion1 Tablespoon Curry Powder1 tsp salt1 tsp black pepper
Boil 4 large eggs until firm (You can remove some or all of the yolks once boiled, which will change the nutritional content appreciably.)
Dice hard boiled eggs and stir in 4 tablespoons of soy mayonnaise. Add in 3/4 cup diced celery, 3/4 cup diced cucumber with peel, and seasonings: salt, pepper, dried minced onion, curry powder, and paprika. Chill before serving. Makes roughly 2 cups, enough for four sandwiches. (We like it on whole wheat tortillas.)
