1 lb Tilapia filets1/2 cup crushed or cubed pineapple (canned no sugar added)2 tsp fresh ginger root2 tsp minced garlic1 Tbsp Olive Oil1/4 cup Orange Juice
In a skillet heat oil.
Add garlic and ginger and place fish in the hot pan. Over the fish add the pineapple. Flip the fish when brown on one side, and let sit for 1 minute before adding the orange juice. Cook an additional 2-3 minutes. Add fish and pineapple over rice or shredded cabbage slaw for a lively fresh dish... and it excellent for you!
