Crockpot Santa Fe Chicken (Marilee)

Ingredients
3lbs boneless skinless chicken breast halves. (About breasts halved)16oz Jar Frontera Guajillo Mexican Salsa1 can black beans, rinsed and drained1 can mixed vegetablessalt, pepper, garlic, pepper, cilantro,other seasonings to flavor
Directions
Rinse and Trim Chicken of Any visible Fat.

Season with spices of your choice. I used garlic powder, minced garlic, salt, pepper, cumin, cayenne pepper, cilantro.

Spray crockpot w/ nonstick spray.

Mix beans, veggie and 1/2 salsa jar in the crockpot.

Place Chicken on top.

Pour remaining Salsa over the chicken.

Cook on High for 3 hours or Low for about 6 hours.

Right before serving, sprinkle cheese on top and leave in crockpot for 5-10mins until it's melted.

Serve and Enjoy!

Makes 12 3-4oz servings or 6 for heartier appetites
