Dijon Vinaigarette

Ingredients
Olive oil, red wine or balsamic vinegar, dijon mustard, water
Directions
Whisk together the mustard and vinager. Slowly drizzle and whisk in olive oil. It will gradually thicken. When all of the oil has been incorporated, whisk in about a tablespoon of water. This will keep the dressing emulsified. Store at room temperature. Great on Nicoise salad, beet, grated carrots, or tomato and basil.
