Black Bean, Kidney Bean & Chicken Chili

1 lb ground chicken1 15-ounce can Mexican style Stewed Tomatoes1 15-ounce can black beans1 15-ounce can whole kernal corn1 5.5-ounce can V-8 or tomato juice 1 can red kidney beans, drained (3 servings)3 tbsp chili powder (season to taste)3 garlic cloves, minced15 1/2 oz. can hominy, drained and rinsed1/2 tsp. dried oregano1/4 tsp ground cuminSalt to taste (not added to nutritional information)Shredded cheddar cheese (not added to nutritional information)
Add minced garlic cloves and chicken to crockpot first, then add all other ingredients. Stir ingredients on top of the chicken. Cook on high for 4-6 hours. When finished, chicken should spread easily with a cooking spoon. Shred chicken & stir all ingredients together. Add salt to taste & top with shredded cheese (optional). Can be served over chips, rice, noodles, with crackers, or just plain. Enjoy!
