sweet and sour turkey meatballs

Ingredients

2 lbs ground turkey1/2 cup bread crumbs1/4 cup egg substitute1 tbsp each corn starch and vinegar1 20 oz. can of pineapple chunks2 tsp soy sauce1 cup splenda1 tbsp molasses2 bell peppers
combine egg substitute and bread crumbs
add ground turkey
form into 36 1" meatballs (or use tablespoon)
cut 2 bell peppers into 3/4"-1" cubes
drain juice from pineapples and combine with splenda, molasses, corn starch, vinegar, and soy sauce
pour into 13" x 9" baking dish
assemble 1 bell pepper cube, 1 pineapple chunk and 1 meatball on a toothpick
place standing up with meatball on bottom or lie on side in baking dish
bake 30 40 mins til meatballs are done
serving size=4 meatballs
