Hearty Pumpkin Bread

Ingredients
1 (15 ounce) can pumpkin puree 4 eggs 1/2 cup vegetable oil3/4 cup unsweetened applesauce1/2 cup water 1 3/4 cups white sugar1/2 cup packed brown sugar2 cups all-purpose flour 1 1/2 cups whole wheat flour6 tbsp. ground flax seeds2 1/2 teaspoons baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1/4 teaspoon ground ginger
Directions
Pre-heat oven to 325 degrees F. Spray bottom and halfway up the sides of three 7" x 3" loaf pans.

In a large bowl, stir together the whole wheat flour, white flour, ground flax seeds, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

In a separate bowl, mix together pumpkin puree, eggs, oil, applesauce, water, and sugars until well blended.

Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for 55-60 minutes in the pre-heated oven. Loaves are done when toothpick inserted in center comes out clean.

Makes 3 loaves or 30 3/4" slices.
